Every cake is freshly made so that it tastes as good as it looks on the wedding day. For those that find it hard to choose remember each tier can be a different flavour. It is advised that the fruit cake is usually the bottom tier as it is the heaviest. However dowelled cakes should support each tier separately, which would allow for an all vanilla or chocolate sponge cake if desired.

If you are following tradition and considering saving the top tier of a wedding cake for a christening then this should always be made from fruit cake to last the time required.

  • Fruit cake matured with brandy or rum, covered in marzipan then royal icing or sugar paste.
  • Vanilla madeira sponge layered with raspberry or apricot preserve and vanilla, lemon or orange buttercream.
  • Lemon madeira cake layered with lemon buttercream and optional lemon curd.
  • Coffee cake layered with coffee buttercream.
  • Carrot cake layered with vanilla bean buttercream.
  • Chocolate fudge cake layered with chocolate ganache.
